New Style Smoked Chicken Back

Ingredients

Chicken 1pc
Smoked water 1tsp
Sesame oil 1tsp
Sliced red chili 1tsp
 
Marinade Sauce:
Star Anise 100g
Cinnamon Stick 100g
Licroce 100g
Nutmeg 25g
Whole Clove 25g
Ginger Powder 25g
Dried Clementine Skin 25g
Dried Lou Hon Fruit 1pc
Light Soy 250g
Dark Soy 250g
Rock Sugar 100g
Shaohing Wine 100g
Oil 100g
Salt 7g
Chicken Powder 1.5g
Water 1500g

Directions

  1. Place all the marinade dry ingredients except water into a cheese cloth bag.
  2. Place the bag into the saucepan then add water and the rest of the liquid ingredients, bring to a full boil for 15 minutes.
  3. Use 3 tbsp dark soy and 1 tsp smoked water rub the whole chicken, marinade for 30 minutes.
  4. Use 250ml marinade sauce rubbed the chicken inside out (save the rest of the marinade sauce for other purpose).
  5. Place chicken inside the Panasonic Electric Pressure Cooker. Close the lid firmly. Set “High” pressure for 20 minutes, press “Start”.
  6. Once the pressure indicator pin has dropped, open the lid.
  7. Cut into pieces, pour sesame oil and sprinkle red chili slices over cooked chicken. Serve chicken with reserved marinade sauce.

Tips

  1. Smoked water is available at supermarkets.
  2. To make the chicken more tasty, marinade the chicken overnight before cooking.
